This is great any time of year, but in the fall & around the holidays it seems perfect.
Apples & Yams (Serves 6 people)
2 lbs. yams or sweet potatoes
2 tart apples
1 Tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon pumpkin pie spice
1 cup apple juice
broken walnuts, toasted or not
Scrub yams & bake in the microwave like you would do for a regular baked potato
While they are cooling, slice & core the apples. Peel & slice the yams. You can also cut them into chunks if you like that better.
Arrange yams & apples mixed together in a microwavable bowl. Sprinkle with walnuts.
In small pan combine cornstarch, salt, spice & apple juice. Cook stirring constantly until it boils & thickens. Boil & stir for 1 minute. Pour over yams & apples.
Cover & microwave until it starts to smell good. Take it out every so often to stir & check that it’s not burning. When all is heated through it’s ready to serve.
If you have something in the oven anyway, you could bake it at 350 degrees for about an hour.
