These should be called spinach squares IMHO. They are good hot or cold. You can serve them any time of day or night. If you cut them small they become, what else, appetizers!
You can use different kinds of cheese if you like. I think using the frozen chopped spinach (thawed & squeezed somewhat dry) is easier than using fresh.
Read the reviews for variations, including using half the amount of butter called for.
I could see these as quick going-out-the-door breakfast brownies for those who love spinach like I do.
