My dear Daughter-in-Law made this for us for Christmas and it was wonderful. The chicken was so tender and flavorful in the puff pastry. Plus it looked so beautifully festive!
This is so impressive and really easy to make. Just spread some herbed cream cheese (like Boursin) on each chicken breast before wrapping in the phyllo dough.
After wrapping and sealing the phyllo dough you can use a knife to lightly carve some designs on the top. Swirls and swooshes look nice. Try to not cut all the way through the pastry. Just make surface cuts. Then baste with an egg wash to get that golden glow that appears after baking. Beautiful!
Serve with a favorite green veggie, like green beans, broccoli, or asparagus. White wine goes well with this dish too.
