Make a Big Impression This Easter
I love holiday recipes that are inexpensive, impressive, and most importantly easy! If you like coconut cake, you will love this lemony version. Eggs that look like flowers are fun any day–pretty, nutritious, and super easy.
Lemon Curd Coconut Cake
Here’s a beautiful cake that is perfect for Easter: a Lemon-Filled Coconut Cake. Click here for the recipe at Lulu the Baker. The recipe is a from-scratch cake with a from-scratch lemon curd in between layers. If you are pressed for time, use a good cake mix (make extra moist with dry pudding mix and extra oil according to package directions) and buy a jar of lemon curd. Scatter a few jelly beans and/or Peeps on top if you like.
Egg Flowers in Pepper Rings
How about some pretty eggs for breakfast? These flower eggs are just pepper rings with an egg cracked into the center. Easy, cheap, and festive! I found these at Apron Strings Blog. Who needs to buy metal rings for eggs that look like flowers? Give me one or two of these, some bacon, and a muffin. With good coffee, I’m done.
