|Clafoutis aux Cerises|
CLAFOUTIS (“clah-foo-TEE”) is a little-known treat from France. It’s a puffed custard cake that’s easy to make, not expensive, and delicious. Plus it only takes 10 minutes to mix! The batter is a cross between a flan (custard) and pancake batter and can be made with fresh cherries now and with other fruits when they are in season. Variations use blueberries, strawberries, rhubarb, peaches, black berries,apricots, plums, mangoes, prunes, apples, cranberries, figs or even clementines. You can also add any kind of nuts and/or coconut. If using dried fruits, soak them in red wine to plump before you use them. You might like to experiment with different combinations and find your “signature clafoutis.” You can sift some powdered sugar over the top after it’s cooled it you like and/or serve with a little whipped cream. It’s all yum. It would be a wonderful dish to bring to a party or potluck. You can make these in individual baking dishes if you have them.
