I’m always looking for a chocolate treat that is decadently good and yet healthy. It’s my quest! I think I’ve finally found it. Best of all it’s as easy as they come.
I’ve been making “chocolate pudding” for at least a year using just unsweetened cocoa powder (Hershey’s) and vanilla yogurt. I put plain vanilla yogurt in a coffee cup and mix in a few tablespoons of cocoa. It becomes very close to chocolate pudding very quickly. Kids who don’t usually like yogurt will probably like this. You can use regular vanilla yogurt or the kind with artificial sweetener.
Here’s how I got to the Eureka moment. I wanted to mix some chocolate pudding, but the large tub of yogurt was about 1/2 full. I thought I might as well mix it in the tub since that’s all I’ve been using it for lately. Then I can just take out what I want each time. So I put in quite a bit more cocoa than usual. I found out that I had put too much cocoa in. I kept mixing, but it looked pretty dry. I was beginning to worry that I’d have to add some milk or something. Finally all the cocoa powder was mixed in and it looked ok.
So I spooned some of the concoction into a cup. Amazing. It was transformed into chocolate mousse. It had so much cocoa in it that it had a really deep dark chocolate flavor. It was a little bit stiff, and the texture was of mousse. I would serve this as fancy dessert anytime. You could add a dollop of whipped cream with shaved chocolate or a few berries for extra pizzazz. Some crushed pistachio nuts make a nice accent also. A perfect ending to a meal when you want something rich, but not heavy.
If you don’t tell anyone how you made it they will think you made some complicated recipe. The first few times you make it, mix in the cocoa a tablespoon at a time. Taste it every so often to get the perfect amount of sweet/bitter balance you like. Enjoy!
