Recently I discovered by accident (using up great leftovers) how delicious homemade chunky guacamole is on warm pita quarters. Melt a little feta onto the pita pieces in a microwave for a bit & then use instead of tortilla chips with the guac. Heaven.
I think what makes it so good is the contrast of the warm pita with the cold guac, the chewiness of the pita with the smooth guac. The feta seems to go well with all the ingredients, but you could try a different cheeses too.
You can try this little bit of fusion cuisine with your favorite guacamole. We like guac to be chunky, but you can chop the ingredients to suit your taste. This is such a great combination–it’s even good without the feta. The important part is to have good quality guac and to warm the pita bread.
