This Italian treat is a favorite of mine. You take vanilla ice cream, soften it, and mix in almonds, crumbled cookies, some chocolate, heavy cream, a little rum, and candied cherries. Then freeze it for a beautiful dessert. Who can resist having at least a little dish of this?
You can follow the recipe or use things you have on hand. It’s pretty hard to ruin this, and it’s always wonderful. Just a warning: you can really taste the rum. It’s not for kids since the alcohol is still present. They can have another ice cream, like cookies and cream.
You can simply scoop the tortoni into dishes to serve or you can get fancy as pictured here. The cupcake look is easy to make. Just put cupcake liners (silver liners look festive) in a muffin pan and fill. Garnish as you like and then freeze. The triangles you see below are made by cutting into a rectangle of frozen tortoni with a knife that was heated in hot water and then dried. The rectangle shape comes from freezing in a loaf pan. Garnish tortoni with almonds, cherries, fresh fruit, chocolate curls, crumbled cookies, etc. It can be as simple or fancy as you like.
